This month EMG were thrilled to attend the launch of Cambium, the re-vamped restaurant at Careys Manor Hotel and SenSpa in Brockenhurst. The aptly named Cambium - referring to secondary growth or new life in plants and trees - has itself undergone a total renovation; and what a transformation it is.
With champagne flowing to the rhythmic hum of the Diamond Boys the electric ambiance of the evening had the kind of buzz that could be felt in the car park.
Taking heed from its name, the ‘feel' of the restaurant is relaxed, refined and beautifully inspired by the surrounding New Forest. Bark laden table centres partner perfectly with the mossy-green upholstery of comfy chairs while hand painted English trees adorn the walls. The clean lines of the sandy-colored seating booths and subtle match of the freshly painted walls add a modern touch yet achieve an elegant intimacy, enhanced by golden oak leaf screens, creating the perfect balance for the lucky diner.
Stunning Food, Awesome Team
Showcasing the obvious abundance of skills present in the Cambium kitchen - an awesome team led by Chef Paul Peters - launch night guests sampled a banquet of culinary delights, embarking on a miniature dinner journey from appetisers all the way through to dessert.
Capturing the essence of the local produce and surroundings, each dish provided a perfect balance of sensory enjoyment; the delicate construction of the impeccably cooked scallop atop a silky celeriac puree finished with the sweet crunch of a candied hazelnut, was a particular highlight. Each dish flowed perfectly to the next culminating in the dénouement of the night; a stellar cheese board wrapping a giant red bow around a fantastically packaged evening.
Never was a glass empty nor a table un-cleared; the service, ambiance, food and entertainment was first class - a fabulous night!
We're already looking forward to a return visit and to watching the successful growth of the beautiful Cambium Restaurant.
